These cookies have become a standby in our house. I make them for almost everything. Every time a kid has a birthday I make these cookies. I make them in every color, and sometimes in rainbows. Everyone loves these. Gooey Monster Eye Cookies and they honestly could not be simpler to make. These are one of those cake mix cookies that you can toss together super quick and bake up to make a cute treat. My kids like the little eyes but when we make them most of the rest of year we trade the eyes for sparkly sugar or other decorations.
You will need
1box yellow cake mix
1/2 softened butter
1/2 tsp vanilla
8oz cream cheese room temp
Mix together butter, cream cheese, and egg, add in cake mix and food coloring. Chill for 30 minutes. Roll into small balls and roll through powdered sugar. Place on lined cookie sheet and bake at 350 for 10-12 minutes. Decorate with candy eyes and place on cooling rack to finish cooling.
So that is the original recipe, but when I make these cookies I do not use an egg. I don’t sub anything in for the egg either. The cookies turn out just fine without it and they come out tasting like cream cheese icing. You do have to be very careful not to burn them and be careful handling them while still warm as they are more delicate without the egg to help them hold together. While waiting for cookies to bake we tried out exquisite corpse. I thought it was an interesting concept, Terror had a difficult time letting go of the creative process with his monster but I think it was worth trying and we will do it again.
